This looks like a fun thread!

I'll go with some classical mythology of I may.

Name: The Sphinx of Thebes
Species: The Riddle Pokemon
Type: Psychic/Dark
Ability: Defiant/Intimidate
Stats: HP: 90, Attack: 95, Defense: 80, Special Attack: 85, Special Defense: 60, Speed: 83
100% female, no evolutions

Notable moves: Starts with Riddle (decreases The Sphinx's Special Defense by 1 but also decreases the opponent's special defense and defense each by 1. This also kicks in Defiant), Confusion, Psychic (very late), Psycho Cut, Role Play, Trick, Bite, Crunch, Snarl, Fake Tears, Hone Claws, Nasty Plot, Night Slash, Punishment, Pursuit, Taunt, Torment, Slash, Air Slash, Swagger, Mean Look

This pokemon has two builds, one that focuses on attack and one that focuses on special attack, which can be somewhat mixed. It has meh special defense as it was defeated by answering her riddle, her main weakness.

Interesting thread. I'll go with one from Marvel Comics. She might sound a bit overpowered but considering how she has been portrayed in X-Men lore this is deliberate. I went with Gen VII mechanics considering I believe Mega Evolution works best with her transforming into Phoenix. If going by Gen VIII mechanics, then an item that can turn her into Phoenix will be necessary. Possibly one that works upon fainting but that would be even more broken.

Name: Jean Grey
Species: Mutant Pokemon
Type: Psychic
Ability: Telepathy/Levitate
Hidden Ability: Friend Guard
Gender Rate: 100% Female

Base Stats:
Very high Special Attack, high Attack and Speed, okay Special Defense, poor Defense and HP.

Mega Evolution
Type: Psychic/Fire
Ability: Solar Power

Stat Changes: Special Attack, Attack, and Speed

1 - Pound
1 - Leer
6 - Confusion
11 - Telekinesis
15 - Disable
20 - Psybeam
27 - Hypnosis
33 - Reflect
39 - Extrasensory
45 - Barrier
51 - Psychic
57 - Fly
63 - Psycho Boost
68 - Flamethrower
73 - Outrage
79 - Dark Pulse
85 - Explosion

Notable TMs include Calm Mind, Taunt, Reflect, Light Screen, Psychic, Shadow Ball, Flamethrower, Fire Blast, Overheat, Will-O-Wisp, Stone Edge, Rock Slide, Grass Knot, U-Turn, Trick Room, and Dark Pulse. Notable tutor moves include Defog, Fire Punch, Heat Wave, Knock Off, Low Kick, Outrage, Pain Split, Stealth Rock, Superpower, and Trick

Okay, this actually have been forgotten for about about half a month but let me get it back into the running track. I'll use a classic fan favorite character. And also to include a character who technically has an evolution as a Pokemon here, for the very first time. This one starts weak but gets stronger with evolution.

1st form:
Name: Zero Suit Samus
Category: Bounty Hunter Pokemon
Type: Electric
Ability: Unburden
Gender: 100% female.
Stats: HP - 50, Attack - 40, Defense - 30, Special Attack - 45, Special Defense - 35, Speed - 75 (BST: 275)
Learnset: Lv. 1 - Pound, Lv. 3 - Leer, Lv. 6 - Thunder Shock, Lv. 10 - Quick Attack, - Lv. 15. Charge, Lv 20. - Agility, Lv. 30 - Acrobatics, Lv. 36 - Fire Lash, Lv 50. - Paralyzer (signature move)
(Category and Gender carries over for the next two forms.)
Evolves at level 25 to:
2nd form:
Name: Power Suit Samus
Type: Electric / Steel
Ability: Battle Armor
Stats: HP - 100, Attack - 70, Defense - 85, Special Attack - 80, Special Defense - 65, Speed - 50 (BST: 450)
Learnset: All moves at 1st form are unchanged with the exception of instead learning Iron Defense at Lv. 10 and Refresh at Lv. 20, At Evo (automatically) - Charge Beam, Lv 32. - Morph Bomb (signature move), Lv 37. - Gyro Ball, Lv 42 - Laser Focus, Lv 47 - Flash Cannon, Lv 52 - Thunderbolt, Lv 57 - Recover, Lv. 62 - Hyper Beam, Lv. 67 - Zap Cannon.
Evolves with Thunder Stone to:
3rd form (final):
Name: Varia Suit Samus
Type: Electric / Steel
Ability: Filter
Stats: HP - 120, Attack - 80, Defense - 100, Special Attack - 90, Special Defense - 90, Speed - 60 (BST: 540)
Learnset: Retains moves at 2nd form, At Evo (automatically) - Protect. Also at Lv. 1 - Flamethrower and Ice Beam.
Other notable non-level up learnset moves: Can learn TM moves that most pokemon can learn. Also can learn Flamethrower, Thunderbolt, Ice Beam, Fire Blast, Thunder, Water Pulse, Charge Beam, Flash Cannon, Gyro Ball, Sludge Bomb, and Focus Blast, as well as Magnet Rise and Steel Beam.

Paralyzer - 30 BP Electric type Special move, 100% Accuracy. While this seems really pitful, it has a 100% chance to inflict Paralysis if the target is not immune to that status effect, as well as a 30% chance to inflict Flinching. (Which seems like a mix of Nuzzle and Thunder Fang)
Morph Bomb - 100 BP Steel type Special move, 80% Accuracy. High critical hit ratio, 20% chance of flinching the target. (Similar to Stone Edge but is Steel type and is Special, and has an additional 20% chance to cause flinching.)
